The oven is designed to treat each deck as its own independent oven. However, you can adjust the settings for individual decks to fine-tune the baking process.
Set Point Percentage:
When you set the oven to heat up to 500°f, it actually tells Deck 1, Deck 2, and Deck 3 to each aim for 500°f. If you notice that Deck 1 is baking too fast, you can adjust it in the settings.
For instance, setting Deck 1 to -5.0% while leaving Deck 2 and Deck 3 unchanged would result in the following target temperatures when the oven is set to 500°f:
- Deck 1: 475°F
- Deck 2: 500°F
- Deck 3: 500°F
Heating Elements and the Bottom Stone:
Each deck only has 1 heating element above it and one bottom heating element below the bottom stone. The bottom heating element requires separate control because:
- The bottom stone retains extra heat: The heat radiates back from the bottom stone, which is sandwiched between the heating element and the oven floor.
- This can make the bottom stone hotter than intended, potentially leading to uneven baking.
Bottom Stone % Setting:
- The Bottom Stone % adjustment allows you to control how long the bottom heating element runs compared to the others.
- For example, at the factory default setting of 75%, the bottom heating element will run for 75% of the time that the upper heating elements run.
When making Set Point Adjustments, it is recommended to either do the adjustments before preheating the oven or after your bake day is complete. The stones hold the radiant heat for a long time and making adjustments while oven is still hot can result in overcompensation and inconsistent results.
