The Simply Bread Oven is engineered for superior heat insulation. Due to this design, when steam is introduced via the steam generator, alongside the steam naturally generated from the hydration of the loaves, some steam may occasionally escape from the oven. Even with the steam handle in the closed position, it is not uncommon to observe steam emanating from various areas, such as the door or corners of the oven. This phenomenon is entirely expected and serves to prevent the strong insulation of the oven from becoming a pressure cooker. Retaining all steam within the oven could inadvertently create conditions similar to a pressure cooker, negatively affecting the baking process intended for the items.
On the other hand, if the alignment of your oven's door is compromised, it may create a gap between the door and the seal, resulting in excessive steam escaping from this area. To assess whether your oven's door alignment is correct, inspect the space between the door and seal when the door is closed. Look for any visible light leaking from between the seal and door or check if the top and bottom door latches are securely positioned behind the hump on the strike plate.
